Day 14 of the 6-week Challenge

Two weeks into the challenge, and the first day of my vacation.  I forgot to bring my food scale.  At first I was disappointed, then glad.  I'm tired of measuring my food.   I know how much to eat.   If you aren't sure, you can measure your food.   I think it's great to do for 2-3 weeks if you've never done it before.  If you are trying to lose weight, it gives you an idea where most of the calories come from; and if you are trying to build muscle by working out (the only way to do it), it helps you see where the higher protein foods are (green veggies, beans and nuts, not fruit).

Now everyone handles food on vacation differently.   I prefer making my own food to trying to find something in restaurants, and my travel companion doesn't want to waste time in the restaurants either.  You can make good time on the road by eating in the car.  So it's sort of like camping only we'll be staying in hotels this trip.  Here's my food for a few days.  At right is an electric cooler, which plugs into the car electrical outlet.  Picnic basket has utensils.  The other bags (insulated) have today's food and some extra food that didn't fit into the cooler.

Oh, and can't forget the beans:

Today's meals were

Brekky:  salad and baked sweet potato.  That's the last of the sweet potatoes for this trip because I won't be cooking, except maybe oatmeal.   The salad was: cabbage, kale, bok choy (a bit too strong tasting), lettuce,  broccolini, sweet red pepper, pear, peach, apple, zucchini, mushrooms, edamame, peas, seed mixture, and that really expensive sweet balsamic vinegar.  That's like sugar, definitely something to eat in small quantities.  I made a giant batch and split it into 3 big bowls (8 cup size!) for each meal.  Here's my breakfast:


Lunch was salad and carrots.  Dinner was the same.    That's kinda how it's going to be on this vacation, the same old thing every meal.  But the salad fixings will vary.  In fact, it's fun to see what I can make up from the different stores I visit.

I am a true believer of being prepared and you have taken it to such another level! So inspirational.

I was in Whole Foods this past weekend (some people go to the club, I prefer Whole Foods) and there was a Vitamix demonstration in full force!!! The presenter made us tortilla soup, smoothies, "ice cream"....it was like I was at ETL Disneyland...I wanted a Vitamix soooooooooo bad. He kept honing in on me to ask his cheezy questions because I was probably way too into it, but whatever. I'm dedicated to this program and this 6 week Vitamix challenge!! I started 9/01 and thusfar, I've dropped 2.8 lbs. Sending everyone good vibes to stick with their goals! =)Thanks again for doing this.

Wow Barb that is amazing planning and packing for vacation! Hope you have a great trip!

today I started day 3 of the Beck diet solution again as well as the 6 week challenge to help me get back into better habits all the way around. I ate sitting down today.

I had peaches and pears with buckwheat for breakfast, big cabbage salad for lunch with kidney beans and homemade cashew ginger dressing that was amazing! Then I had a small snack of a slice of peach, almonds and sunflower seeds and dinner was an amazing lentil, vegetable, tofu, rice in orange curry sauce....YUM!

Still not making desserts at night! Yay! I was tempted to make cookies tonight but I didn't do it.

I completed day 8 of the 6 week challenge. It has been going well. I am not sure where to post this, so I will do it here and at Dr Fuhrman Member Center. I have been very faithful to ETL. I find that I am not that hungry at dinner and have been eating less then. Every day I have had one serving of soup or stew with beans and veggies. Then big salads with come chopped up greens (like kale or chard as well as romaine) and chopped veggies on top. I have the 1 cup of beans on salads and in the soups/stew. I have had between 1 and 2 oz of nuts/seeds, but tending more to 1oz. My overall goal is to stabilize my weight loss and maintain. I intended to add starchy veggie/grains but have not really been hungry enough. I had corn in a chili that lasted several meals and I had some rice in lentil soup which I have 3 more servngs of for other days. I was tempted to begin down the binge path today - I missed bfast becuase I got a flat tire coming home from the Y. I was very hungry for lunch and was tempted when I was done to eat peanuts (which in this circumstance get me in trouble). I was so pleased. I decided to ride out the craving to see if it was really necessary...and then I wasn't super hungry at dinner even. So it was a huge victory for me. So 8 days accomplished and 4 weeks 6 days to go. I think I have stabilized at 115lbs on my 5'7" frame...we will see.

Way to go Lauren and Tandi and Lisa! Lauren got a new dose of motivation from the ETL disneyland. Tandi, I know how hard this is for you, so congratulation!! and Lisa, all those things would have been challenges for me too. Great!
