Day 1, how's it going?

Hi everyone!  I had a fabulous day off from work today where I exhausted myself hiking and mountain biking in the heat and humidity.  I think I'm overflowing with sun happiness and endorphins.  Does anyone else get all happy from being in the sunshine?

Here are my food logs for the day.

Brekky:  some frozen fruit while making housemate's smoothie.  (yummy bing cherries, sour cherries, mango, blueberries).  It quickly frosted over in the humidity:

some raw veggies while making lunch and dinner (I'm still eating brekky here).  (carrots, kohlrabi, sugar snap peas, celery):

Note:  it's probably not good policy to eat while preparing food but I'm allowing it for myself during breakfast because, well you choose your battles and I'm not choosing this one right now.

Lunch and Dinner were 4 course meals (prepared during brekky).  I forgot to snap pictures.  The courses were:  1/2 baked sweet potato, beans and greens, salad, and peach or nectarine.  The peach and nectarine were at perfect ripeness and were super juicy, yum.  

The beans and greens were prepared a few days ago from  beans, wild rice, barley, kamut (wheatberries), eggplant, zucchini, tomatoes, collards, kale, herbs from the garden (basil, cilantro, dill, oregano, chives, thyme), mushrooms, mustard (salt-free).  These will last through tomorrow.

The salad would have been perfect with tomatoes instead of apples, so I will do that tomorrow.  It had cabbage (local and really good), apple, cucumber, spinach, basil, yellow summer squash, broccoli (from the garden), seed mixture, and balsamic vinegar.   Tomorrow I'll do the same but with tomatoes from the garden.

Total calories 1415.  fat 16 g (10%), protein 57 g (12%), carbs 291 (78%), fiber 75 g.

Sounds like you had a fun day Barb! Your meals all sound great. Day 1 went well for me! I ate -

Breakfast: oatmeal with blueberries, 1/2 oz walnuts and a splash of soy milk
Lunch: baby kale with pinto beans, orange pepper, avocado, onion, cooked mushrooms and two apples
Dinner: Collards, Carrots and Raisins from Eat to Live and some frozen mixed veggies with a little baked tofu; honeydew melon for dessert

Everything tasted wonderful and I feel great! Hope everyone else had a great day 1! Now to work on getting more sleep....

Barb, your meals always sound yummy! Where do you get your salt-free mustard from? I've been looking for some.

Did something yesterday I've never done before. I purchased some hummus and I dipped my raw, fresh broccoli in it for an afternoon snack. Don't know if the hummus is allowed in Dr. Fuhrman's diet, but it tasted good and it got me eating the healthy broccoli. (Remember, I'm a newbie at this healthy eating thing.) I finished off my carrot juice mid-afternoon and made myself a smoothie with nectarines, orange juice, strawberries, a banana, ice and some chia seeds (just happened to have the seeds on hand - a gift from a friend who wanted me to try them). Had a green salad for dinner.

I'm gettin' there...slowly but surely.

It's interesting reading what others have eaten. Gives me ideas for what to eat next!

Being out in the sun makes me feel great, too.



Yesterday, I made a strange new dish. For reasons outside my control, my lunch salad was discarded. Since I was hungry, I went on a fridge safari. With a dish of leftover pintos, chili paste, Bragg's, and nori, I made sushi burritos-strange but extremely delicious. In fact they are better than my old favorite made with homemade flour tortillas. I also had a green/fruit/flax smoothie for breakfast, some fruit and almonds, and some tofu with greens for dinner. I love creatively dining in the nutritarian world.

Okra, your meals sound great.

Lightweight, my grocery store carries Westbrae stoneground no-salt added mustard. if you can't find it in the store, you can order from saltwatcher.com. their site is temporarily down right now (I hope it's only temporary!).

Jen, hummus is definitely allowed but unfortunately, most store-bought hummus is loaded with extra salt and oil. look carefully and you might find some in the store (Whole Foods often has some). or you can make your own. google "oil-free hummus" and you'll find lots of recipes.

Ginger, my best inventions have come when I needed to go grocery shopping and "made do" with what I had on hand. :)

I started on Wednesday actually and so far things are going well - my kids are finally back at school so now I will have more time to keep up with this!

Day 1 was good for me, too. Since it is tomato season in many areas, I'll just share my evening meal in hopes that others may enjoy it:

Make a beautiful red puree from roughly chopped tomato, onion, garlic, and a slice of jalapeno (optional) roasted in the oven. Add juice from 1 lime.

Add pre-cooked beans and chopped spinach to the puree & warm through as desired.

Top with fresh cilantro and avocado.

Simple, completely delicious, and wonderfully nourishing!
