6-week Challenge participants

(updated Sept. 6).  Hi everyone, we had 56 people express an interest in the 6-week Challenge!   I didn't get goals from 2 people, as you can see below, so it's possible they changed their mind or I lost their info--it was hard to keep track of everything.  It's not too late if you just forgot.  I'm impressed!   I hope we all can have some fun with this.  Posted below are your screen names and my synopsis of your goals.  Please send any corrections if you have them. I haven't received my vita-mix yet but I assume I will by the time the challenge ends.

I have started slowly into this challenge but managed to do a walk these past 2 days and going to try hard to get salad included in my daily plan today

I have tried eating fruit for breakfast (fruit smoothie, or whole fruit, or fruit and oatmeal) and it just does not take me through the morning. So I have switched to eating meal of beans and veggies in the morning. It gives me mental and physical energy I need to still feel great (not depleted) by 10AM.

I was out of town the last few days visiting family where everyone ate horribly. I usually..no, always.. have a hard time with cravings down there and this time I had none at all. I ate so much salad, bean/veggie dishes, and fruit there was no room for cravings. They looked at me and my food like we were from a different planet. Now when I got home I saw tortilla chips on the counter and wanted to stuff myself with them, but instead made some hummus (with a little tahini but no oil) to have with carrots. I ate too much but I figure it's better than giving into old habits of eating entire bags of chips.
I'm feeling good and excited to see this through!
...now just to add regular exercise...

Angie, that sounds like a great breakfast. I usually eat more but I've had an unusual schedule lately in the mornings and haven't needed to eat much. I will probably include more oatmeal in the coming weeks.

Amanda, congratulations on resisting the tempations. Some day they won't be temptations anymore. You are influencing people around you in a positive way even if you don't know it yet.

This week had to be e roughest week of the challenge. I went in for knee surgery last Wednesday to get a Denovo cartilage implant and this will require me to spend the next 6 weeks on crutches. I only stayed one night in the hospital but told them as soon as I got to my room that I did not plan to eat any hospital food while was there due to my special dietary needs. My husband brought me every meal while I was there and even thought to bring me some apples, carrotts, and hummus that I would have to snack between meals. I find it funny and makes me proud considering where I have come from healthwise in the last year and a half (lost 60 lbs and my cholesterol and blood pressure went from boarderline high to perfectly healthy now) how many people look at me now and want health advice from me. I have more work to do in my journey, but it is a great feeling when others around me reckognize me as being healthy. All the nurses and hospital staff coming in to check on mecommented on how healthy I was and asked me about my diet and I had the opportunity to educate them while I was there about what I was following, what had inspired me, and the results I have seen. Most of which say they want to give the diet a try and are going to go buy Dr. Fuhrman's book. In reality I know many won't, but it makes me happy to think that some of these nurses with young families may at least start to think about it before the serve their young children processed foods. I was rather lucky growing up that my parents always prepared a sit down meal for diner for us everynight and we were constantly told to eat our green veggies, but in contrast my husbands family took the kids to Burger King every morning for breakfast and set him up for lots of bad habits to break and health issues to overcome later in life. But to the report out on this past week, despite the circumstances and pain, I have not broke my diet once. I havent felt up to eating a lot this week, but I rest easy knowing what i am eating is delivering my body a higher nutritional content per calorie and enabling my body to heal. I decided last night I was going to convert from pain pills to advil today because I am not a big fan of pills (especially narcotics) and tired of feeling itchy and tired but still in pain. I didnt take anything last night and although I didnt sleep the best, the pain was not overwelming. I also am happy to report that my husband, who has only been comitted to this lifestyle a couple weeks now, got on the scales and is down 7 or 8 pounds as of yesterday. I notice he is looking great and the differences to his energy level and attitude. I am proud of him for doing so well and learning to make and love green smoothies this past week. I feel so helpless with all the things I cant do right now to help around the house but so happy to see him eating well and serving up healthy foods to me when I am not doing everything for him. It is my birthday tomorrow, but sadly I feel lucky to be laid up and not to have to choose to go to a restaurant that serves mostly SAD foods in order to make others around me confortable on my birthday. I will be real happy if my husband blends up some frozen bananas and figs to make a healthy ice cream split for a birthday treat. We are also going to try out our new food dehydrator and make a raw food pizza (crust from flax seed and tomato) I have been wanting to try to recreate at home. Excited about my continuous improvement and heeling this next week. Excited to continue to see results from me and my husband this next week. Hoping everyone else who is struggling will stick with it and keep trying to fnd EFL recipes that you like just as much as unhealthy SAD foods. Don't focus on what you are giving up, but visualize your healthy future and what you will be gaining. Better health, being sexy and attractive to others, having energy, clothes that fit, inspiring others, are all things that you can look forward to.

I struggled with this as well as I previously thought I had to start off the day with a protein and that eating just fruit withan ounce of nuts really spiked my blood sugars and I would crash andbe hungry mid morning. A few recipes from Dr Fuhrman's website became go tos for me. One that really helped me at first although it took me more than a couple attempts before i liked the flavor was gabanzo beans with bananas served over your favorite milk like a cereal. Also, after adjusting a little i found that if I added as much spinach as I coupd tolerate to the eat your greens smoothie that it would last me all morning. I also sometimes have a half serving of oatmeal with fruit and nuts on top. I stick to the one egg per week rule and where in my old SAD eating days Sunday we would often go out for a big brunch, and I was a little sick last night and couldn't eat, I woke up craving something like this, I had my husband cook me up one egg white with mushrooms and spinach and half a tortilla cut up in it (like migas) served it with a half cup of black beans with cumin and cilantro. This really hit the spot this week. When adjusting to EFL diet I thought one egg seemed pointless, but now this morning it was a completely satisfying meal for me. Amazing how my perspective has changed with regards to breakfast in just 4 short weeks.

wow, ttujil, you influenced hospital staff? That's amazing. When I was in the hospital, I brought my own food and they just tried to feed me theirs and then ignored me when I said I'm eating my own. Which is fine. But good for you for spreading the word about healthy eating!

wow, burger kind for breakfast every day? remarkable. I too grew up in a relatively healthy eating style, at least compared to nowadays.

I'm still going strong! I reeeeeeeeally want that Vitamix. Today I accomplished a goal of jogging everyday for 5 days straight!! I am pumped! Eat to Live!
