1 sweet potato
pumpkin pie spice
1 tsp date syrup (optional)
Bake the sweet potato at 400F for about 50 minutes. (if small, do a shorter time). Let it cool enough so you can peel the skin, which should be mostly separated from the potato in the cooking process. Mash it up and add the pumpkin pie spice. If you don't have pumpkin pie spice, you can combine 1 part each of cinnamon, nutmeg, ginger, and clove. If you want it sweeter, add some sweetener.
I like this because I have always loved pumpkin pie, and this tastes just as good to me.

Haha I've been living off a diet of this very concoction for over half a year now. No question, this is by far my favorite "dish!" I consume probably a gallon of mashed sweet potatoes seasoned with pumpkin pie spice daily. And the more I eat, the more I CRAVE!!!
Curiosity prompted me to do a Google search to see for myself if anyone appreciates this delightful dish as much as I do, or if even aware how tasty simplicity can be! I'm a lass of 26, weighing just around 100lb and I can actually proudly boast I consume over 2500 calories a day...mostly derived from my baked sweet potato fixation!
I'm happy to see this imperative food staple is more commonplace than I assumed!
