It can be pretty tough in places. Then I slice it in to sticks. Yes, in that picture I think I had dumped the slices on top of a bowl of spinach or and herbs. Let me know if you like them okay. You can also steam them like you do any other cooked veggie---that is probably a much gentler introduction so you should try that if you don't like them raw. And try them mixed in with soups. It can be used in place or in addition to onions, potatoes, or veggies.
