You could soak them in water or carrot juice over night, then cook them all day in the slow cooker. or you could use the quicksoak method: on the stove, bring the beans to boil, then turn off the heat, let sit for an hour. then cook all day in the slow-cooker. On the other hand, beans are cheap, so you could just try out your idea and see if it works!
